Ichiran Ramen

Ichiran Ramen, which is well known for its individual partitioned seat design (cubicle you may say) so you may concentrate in enjoying the taste of the noodle, is my all time favourite ramen restaurant in Japan.


Unlike pork bone (known as tonkotsu) broth ramen of other restaurants, Ichiran's soup base has its uniqueness of able to preserve the best essence of tonkotsu while eliminating the unwanted byproducts such as excessive fat and stink.


Able to customize to your likings with a multiple-choice order sheet (English available), the only choice of pork bone broth ramen could transform into countless combinations to cater your preference of the day, anything from noodle tenderness, flavour strength of the soup base, to the amount of garlic and amount of its secret spicy sauce, you always have your say.


Apart from the standard menu available across most of its branches, certain "premium stores" feature special versions of the signature ramen. Canal City at Fukuoka, for example, offers the noodle with a touch of "secret-recepe" vinegar, while another store at Hakata Tenjin offers special soup base prepared in a caldron. Sure they are not to be missed if you pass by the area.
